Winter Vegetables + Sausage

Delicata squash + leek + kale 

I grew none of these vegetables. They are what I won at the farmers market for being outside all day. #winterishere

Ingredients

half of a clarinet sized leek (or an average one)

delicata squash

package of Trader Joe's Sausage

kale, chopped

olive oil

garlic

salt + pepper

aminos (coconut or braggs, about 1/4 cup)

peas (optional)

Directions

Take a phallic photo of the leek before slicing in half lengthwise. Slice the leek, width wise, to create pieces that are 1/4 inch wide. Heat olive oil in skillet. Toss in leek to intimidate your enemies. 

Prepare the delicata. Slice in half lenghtwise, scoop out innards, and then chop into cubes. 

Choose your own adventure! Either add squash to pan with the leek or microwave for a few minutes (stirring in between) and then add to the leek. This lets the leek cook more evenly and the squash cook faster. #Idonthavetimetosoftenallthatsquash

Add salt and cover pan for about 5 minutes. Uncover pan and add aminos, maybe more salt, a lot of pepper, and a spoonful of crushed garlic from a jar (no time to peel garlic) and stir. If stuff starts burning to the bottom (at any point) add some of your beverage. I used water but wine is also acceptable. 

Add Kale and cover to let it wilt so it fits in the pan. Uncover and continue cooking. Slice the sausage and add it to the pan. If using, add some frozen peas. Let it cook for a few more minutes, until squash is softened and sausage is heated.
