"Chocolate Chip Cookies"
Why in quotes? Because while it looks like a cookie, smells like a cookie, it only just kind of tastes like a cookie. It's more like eating the memory of a cookie. Recipe adapted from Paleo Grubs (they're recipe tastes more like a cookie, i made it less cookieish)
The difference? Half the amount of honey (making it 1 1/2 tsp for the entire recipe) and use unsweetened chocolate instead of chocolate chips. Oh and add about two handfuls of coconut chips and all the cinnamon.
1 cup almond flour
1/4 tsp baking soda
Pinch of salt
1/4 cup coconut oil, melted
1 1/2 tsp honey
1 tsp vanilla extract (or exaggerate tsp-tbsp)
1 tbsp almond milk
4 oz unsweetened chocolate, chopped
1 tbsp cinnamon
1/2 cup coconut flakes
- Preheat oven to 350
- mix ingredients 1 - 3 together
- mix ingredients 4 - 7 togehter
- combine step 2 and 3
- add ingredients 8 - 10
- ball out about a tbsp of dough at a time onto baking sheet (or slightly larger, but they're going to be small cookies) press to flatten slightly
- bake 10-12 minutes
- Let them cool. For real. If you try to eat them right away they'll just fall apart. and probably burn your mouth.
